Several people have asked what we ate while camping so I thought I’d share! This was what we took to eat but we ended up switching up the meals a bit once we got there. Still, this is a general representation of how well we ate – not on the nutrition front, as there aren’t many vegetables in this menu – on the yummy front!
Sunday – Grilled Pizza
Monday – Red Beans & Rice with Sausage
Tuesday – Taco Soup
Wednesday – Chicken Fiesta Rice a Roni mixed with chicken and tomatoes in tortillas
Thursday – Black Beans & Rice with Sausage
Friday – Sweet ‘N Sour Chicken
Saturday – Chili
As you will notice, we took more “packaged” foods for the latter half of the week – I was afraid my frozen taco soup might get too warm so we ate that earlier than the can of chili!
(I’ve already given the “NOT HEALTHY” disclaimer!)
Most days: Crackers with cheese and summer sausage
Breakfast Oatmeal Surprise & Coffee (see the French Press pot we bought just for our trip?)
We also took enough for one “cool” breakfast of pancakes and eggs which we enjoyed with some real maple syrup we bought in the mountains
Cookies – I made Oatmeal Butterscotch and Chocolate Chocolate Chip
