Popcorn Balls

Fall is a wonderful time of year to make fun and sweet recipes. Oftentimes, these treats can be laden with fat, sugar, and calories. Today, I have a recipe for popcorn balls that is very good, but is much lighter than many traditional popcorn ball recipes I’ve found that use corn syrup and sugar. You can be creative with your popcorn balls by adding in M&M candies, candy corn, and food coloring to make unique popcorn balls. If you mix in chocolate chips right after getting marshmallows out of the microwave, you can create chocolate-marshmallow popcorn balls.

5 cups popcorn, popped
1/2 cup mini chocolate chips (or mini M&M’s, candy corns, etc)
1/3 cup peanuts
2 tablespoons light butter
3 cups miniature marshmallows

In a microwave-safe bowl, combine light butter and marshmallows. Microwave for about 2 minutes, or until both have melted, stirring every 30 seconds. When melted, quickly stir in popcorn, chocolate, and peanuts. Stir to coat.

With buttered hands, shape mixture into balls and place in buttered muffin tins. Allow to dry for 1-2 hours. Enjoy!
