Pumpkin Patch Health Benefits

Pumpkins are a popular fall decor, but instead of throwing away the insides of your decorative pumpkin, use them to make a great dish for tonight’s dinner. Pumpkins are high in potassium, beta carotene, vitamin C, calcium, fiber, and other vitamins and minerals. Pumpkin seeds are a healthy snack full of protein and healthy fats.
Here are some suggestions for using the insides of your pumpkin:

  • Roast pumpkin seeds at 300 degrees until crispy (about 10 minutes). Season with chili powder, salt, cinnamon and sugar, or whatever else you like.
  • Cut pumpkins into small pieces and remove peel and seeds. Boil for 15-20 minutes in lightly salted water. Drain and mash. Use in recipes that call for pumpkin or substitute for sweet potatoes in a pie or casserole.
