Shrimp Linguini

Shrimp Linguini

1 (16 ounce) package uncooked linguini pasta

2 tablespoons olive oil

1 1/2 pounds medium shrimp, peeled and deveined

1 pound sugar snap pea pods

2 large cloves garlic, minced

1 cup lite Italian dressing

1/3 cup reserved pasta water

1 tablespoon light butter

1 tablespoon fresh lemon juice

1/3 cup chopped fresh basil

Salt and pepper to taste


Bring a large pot of water to a boil. Add pasta and cook for 8-10 minutes or until pasta is al dente. Drain pasta, reserving 1/3 cup pasta cooking water.


Heat olive oil in large skillet over medium-high heat. Add shrimp, sugar snap peas, and garlic. Cook for about 3 minutes, stirring frequently, until shrimp are opaque. Add Italian dressing, pasta water, light butter, lemon juice, basil, salt, and pepper. Simmer for about 2 minutes. Toss with pasta and serve.
