The other day, I made this delicious recipe for Ryan and myself when a friend was coming over for dinner. It was absolutely delicious! Enjoy!
2 pounds boneless, skinless chicken breast
1 egg white, slightly beaten
1/2 cup bread crumbs
1 teaspoon olive oil
1 can (or 2 fresh) diced tomatoes
1/2 teaspoon oregano
1/2 teaspoon basil
Dash crushed red pepper
1/2 cup mozzarella cheese, grated
2 tablespoons parmesan cheese, grated
2 tablespoons fresh parsley
Whole Wheat Pasta
Dip chicken breasts in egg white, then in bread crumbs to coat. Place in skillet coated with olive oil and brown on medium heat, turning to brown both sides. Pour tomatoes over chicken and sprinkle with oregano, basil, and red pepper. Cover and cook until chicken reaches 170 degrees (about 15-20 minutes, depending on thickness of chicken) over medium heat. Sprinkle with parmesan and mozzarella cheeses and allow to cook until cheeses melt.
Sprinkle with parsley and serve over pasta.
Serves: about 5-6
