Spinach Alfredo Rice

For Mother’s Day lunch on Sunday, I made this rice recipe for dinner at both my mom’s and Ryan’s mom’s. I thought it turned out delicious and everyone seemed to enjoy it. Utilizing fat-free milk and light butter makes it not too bad for a fun and different rice dish on a budget.

2 cloves garlic, minced
2 tablespoons light butter
1 cup fat-free milk
1/2 cup grated Parmesan cheese
1 bag frozen spinach, thawed
1/3 teaspoon salt
1/4 teaspoon pepper
4 cups cooked brown rice

While rice is cooking, melt butter and saute with garlic in a skillet. Add milk and Parmesan cheese. Cook for about a minute or until cheese has melted. Add spinach, salt, and pepper and cook until warm throughout. Stir in rice.

Serve immediately or place in greased baking dish to refrigerate and reheat the next day.
