Squash Relish

Squash Relish

10 cups squash (shredded) (measure after putting through food processor)
1 big bell pepper
4 large onions
3 tablespoons salt

Mix first three ingredients well and add salt and let set overnight or at least 10 hours. Put in colander and drain.

ADD:
4 1/2 cups sugar
2 1/2 cups vinegar
1 1/2 tablespoons celery seed
2 1/2 tablespoons turmeric
1/2 teaspoon black pepper

Bring to a boil, then add squash and simmer 30 minutes. Put in jars and seal.
