Summer Pasta Salad

The Olympics are in full swing and what better food to highlight than a favorite of athletes everywhere, PASTA! Today I’ve got a pasta salad recipe and even gourmet pasta information to get you into the games!

8 ounces cheese tortellini, cooked
16 ounces corkscrew pasta, cooked
1 can whole kernel corn, drained
1 can peas, drained
1 or 2 cans artichoke hearts, drained and chopped
4 ounces black olives
3 tomatoes, chopped
3 green onions, chopped

Dressing:
1/2 to 3/4 cup extra virgin olive oil (we use 1/2 c.)
1/2 to 1 cup red wine vinegar (we use 1/2 c.)
3 tablespoons seasoned salt
1/2 cup fine-grated Parmesan cheese
2 shakes basil
1 teaspoon minced garlic
5 shakes hot pepper sauce
2 shakes oregano
Salt and pepper to taste

Mix all ingredients for salad in large bowl. Pour dressing over top and mix thoroughly.
