Sweet Potato Casserole

Today, I have three recipes from a very special friend of mine, Mrs. Teresa Wallace. Mrs. Teresa is my future mother-in-law and is a wonderful cook. She says that each Christmas she enjoys making these microwave recipes with help from her daughter, Tiffany, and daughter-in-law, Melinda. Since she rarely makes these recipes outside of the Christmas season, everyone looks forward to each one of them.

Sweet Potato Casserole

“This has been a Thanksgiving and Christmas favorite at our house since 1985! I took a microwave cooking class at MUW (Miss University for Women) and made the whole Thanksgiving meal that year in the microwave! This was one of the dishes.”

3 cups mashed sweet potatoes (pierce whole potatoes, wrap individually in paper towels, and cook for 12 min. in microwave on high)
1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup butter
3 tablespoons milk

Topping:
1 cup light brown sugar
1 cup chopped nuts
1/3 cup flour
1/3 cup butter

Mix together mashed sweet potatoes, sugar, eggs, vanilla, butter, and milk. Place in 9 X 13-inch casserole dish.
Mix topping ingredients and sprinkle over casserole. Microwave on medium-high for 10 minutes.
