Sweet Potato Cheese Ball

1 (8 ounce) package low-fat cream cheese, softened
2 cups (8 oz) low-fat sharp cheddar cheese, shredded
1 cup sweet potatoes, mashed
1 (20 oz) can crushed pineapple, well drained
1 Tbsp onion, minced
Pecans, finely chopped, for garnish

Beat cream cheese and sweet potatoes until well combined. Stir in cheddar cheese, pineapple, and onion and mix well. Form into a ball and sprinkle with pecans.

Serve with your favorite low-fat crackers.
