This is a really good potato-based side that came from my aunt Martha Harpole. Made with fat-free sour cream (you can’t tell the difference all mixed up!) makes it a not-so-bad-for-you side. It tastes really good with hamburgers, barbecue, or a casserole!
5 medium potatoes
8 ounces fat-free sour cream
1 ounce package buttermilk salad dressing mix
Salt and pepper to taste
1 cup shredded low-fat cheddar cheese
Peel and slice potatoes. Boil until tender. Drain, saving 1 Tbsp
liquid. Place potatoes in a 2 quart casserole dish. Add sour cream and
potato liquid. Sprinkle with buttermilk salad dressing mix, salt, and
pepper. Toss with potatoes until potatoes are covered. Sprinkle cheddar
cheese on top. Bake at 350 degrees for 15 minutes until cheese is
melted and potatoes are bubbly. Remove and garnish with parsley or
paprika, if desired. Serve hot.
