Check out this family favorite I made on WCBI TV this morning! White chili is a delicious light feast that my family enjoys.

1/2 cup chopped onion (or 1 small onion)
1 Tbsp olive oil
1 1/2 cup chopped, cooked chicken or 10 ounces canned chicken
1/2 cup chicken broth
2 15-ounce cans Great Northern beans (do NOT drain)
1/2 tsp celery salt
1/2 tsp oregano
1/2 cup salsa
1 1/2 cups shredded low-fat mozzarella cheese
Low-fat sour cream (to garnish)
Low-fat tortilla chips
In 2 qt pot, saute onions in oil until translucent. Add chicken, mixing thoroughly, then add broth. Add beans, celery salt, oregano, and salsa.
Simmer 10 minutes, stirring gently.
Serve with: chips, cheese, sour cream, and green onions (optional)
