Wild Rice & Cranberry Salad

1 pkg long grain and wild rice (Uncle Ben’s is good)
1 cup dried cranberries
1 cup broccoli flowerettes, chopped
4 green onions, chopped
3 celery ribs, thinly sliced
1 2-oz. jar pimento
1 cup dry roasted peanuts

Prepare rice according to directions, cool completely. Combine rice and next 5 ingredients. Add dressing and chill at least 2 hours. Mix in peanuts just before serving.


1/3 cup sugar
2-1/2 Tbsp vinegar
1/8 tsp pepper
1/4 tsp garlic powder
1/2 cup vegetable oil (I use less about 1/3 cup)

Mix all in a jar and shake, pour over rice mixture.
