Yeast and Gluten Free Bean Bread

Another great gluten free recipe from Mrs. Loretta Baker – she says this is a family favorite!

Dry Ingredients:
2 cups Bean flour
1 1/2 tsp. xanthan gum
3 tbsp. brown sugar
1/2 tsp. baking soda
2 tsp. baking powder
1 tsp. egg replacer
1/2 tsp. salt

Wet Ingredients:
3 eggs
3 tbsp. butter
1 tbsp. honey
1/2 tsp. dough enhancer (or vinegar)
3/4 cup buttermilk
1/3 cup water

Preheat oven to 350 degrees.  Grease your loaf pan.  In a bowl, whisk together all dry ingredients.  Set aside.  In the bowl of your mixer, beat the eggs.  Add the melted margarine, honey, dough enhancer, and buttermilk.  Turn the mixer to low and blend.  Add the dry ingredients while on low.  Add sufficient water to make the dough the consistency of cake batter.  Beat one minute on high.  Spoon into the prepared loaf pan and bake for 55 to 60 minutes, covering after 30 minutes with aluminum to prevent over browning.
